The red beans are among the favorite dishes of Cubans and is one of the dishes that you can not miss from Cuban cuisine.
Depending on the region of Cuba, they are prepared in different ways.
- 3 glasses of water
- 1 liter of chicken broth
- 500 grams of red beans
- 1 tablespoon of olive oil
- 8 slices of bacon
- 3 cloves garlic, chopped
- 1 chopped onion
- 1 chopped green pepper
- 1 teaspoon cumin
- 1 teaspoon oregano
- 100 grams of tomato sauce
- 1 bay leaf
- Salt and black pepper
1- Fry the bacon in a pot over medium heat until golden brown
2- Remove the bacon from the pan and cut into pieces, keeping a spoonful of the oil if fried
3- Chop the onion and pepper and sauté over medium high heat for about 4 minutes, until tender.
4- Add the chopped garlic and leave until it begins to brown
5- Add the tomato sauce and leave 1 minute more stirring from time to time.
6- Add the oregano, cumin, salt and pepper and leave for 2 minutes stirring from time to time
7- Put the bacon and the bay leaf in a pot and add water and half of the broth until it is boiled
8- Cover the pot, lower the heat and let it cook for 20 minutes
9- Put the bacon and the bay leaf in a pan and add the water and the broth
10- Bring to a boil, cover and lower the heat for 20 minutes
11- Remove from the fire, remove the laurel hour and add the rest of the broth and the beans
12- Cook for 5 minutes over low heat stirring frequently
